Cranberry and mushroom risotto in bread maker

Last week I shared a recipe that I have submitted for Cape Cod Select Holiday Blogger Recipe Challenge. This week I would like to share one more.

The cranberries have inspired me to cook a risotto with mushrooms and some rosemary. I used my Zojirushi bread maker to cook it. It was again very quick and simple.

So, for the ingredients you will need:

  • 1 can of sliced mushrooms
  • 1 tbsp of minced garlic
  • 1 ½ tsp of rosemary
  • 1/3 cup of Cape Cod Select Premium Frozen Cranberries
  • 1 cup of rice
  • 1 stock cup dissolved in 2 ½ cups of hot water

Preparation:

  • Use saucepan to roast mushrooms and garlic for 3 – 4 min over medium-high heat
  • Dissolve 1 stock cub in 2 ½ cups of hot water
  • Smash cranberries
  • Put all ingredients in bread machine/maker and set it to jam function; for my Zojirushi machine I stopped the cycle after 40 min; depending on the machine check when the dish is ready

      1. I no longer have a bread machine but I enjoy making risotto in a large saute pan. And I always make extra so I can make arancini. 🙂

        Your post reminds me that I need to pick up some dried cranberries, one of these days, so I can make fudge. And maybe florentines.
