My bread machine is working hard! Thus, one thing that we have plenty of is bread. And it does goes stale quite quick. I have written before that I freeze bread and use it in different kind of recipes.
As written before, one more way to use stale bread is to make bread crumbs (https://sourdoughmovement.com/2016/01/25/organic-bread-crumbs/). This time I would like to share with you a very simple recipe for tilapia. Once you are craving for fried fish and have some bread crumbs, this recipe is something you can think about.
The inspiration for this recipe comes from whole foods website. The only difference is that I used pan instead of oven.
For the recipe you will need: fillets of tilapia, 1 egg, some salt and pepper and 1/2 cup of bread crumbs.
- Put bread crumbs into a shallow dish, whisk egg with salt and pepper.
- Gently press tilapia fillets into egg and then bread crumbs to coat. Gently toss between your hands so any bread crumbs that haven’t stuck can fall away. Place the breaded tilapia onto a plate while breading the rest; do not stack.
- Heat olive oil in a skillet over medium-high heat.
- Cook tilapia in hot oil until golden brown, about 4 minutes per side. Transfer cooked fillets to a plate.
Fish goes well with Greek salad and freshly baked bread. Enjoy!
